/004 3.0 is built around a simple idea: a Colombian coffee you can drink every day, without making it feel ordinary.
This lot comes from El Girasol in Quindío, Colombia, produced by Robinson Ortiz. The farm sits at 1850 metres above sea level, where coffee grows alongside bananas, citrus, avocados, and native trees. This creates a balanced agroforestry system and gives the farm a more stable, diverse growing environment.
Robinson is a third-generation coffee producer and has been managing El Girasol for the past 10 years. During that time, he has shifted the farm from more traditional washed production towards controlled and standardised processing. The goal is clear: better consistency, stronger quality, long-term business relationships, and a more financially sustainable future through well-produced coffee.
This lot is processed as a semi-washed, or oxidation washed coffee. Only fully ripe cherries are selectively harvested and brought to the on-site processing station. The coffee first undergoes 36 hours of oxidation in fermentation tanks. It is then rinsed, washed, and depulped before a second fermentation of 14 to 16 hours. After a final wash, the coffee is dried on patios.

Familiar, sweet, balanced, and easy to come back to, but with enough complexity to stay interesting.
Expect sweet red apple, mixed nuts, and a soft velvet body. It works beautifully as filter, but has enough structure and sweetness to perform very well as espresso too.
