Washed coffee from the village of Yabitu Tume, in the Uraga district of Ethiopia's Guji zone, grown between 1,900–2,300m. Smallholder farmers cultivate coffee on garden-like plots near their homes, shaded by native trees like Enset, Albizia, and Acacia, on fertile clay soils that allow cherries to mature slowly, building exceptional sweetness and complexity.
After selective harvesting, ripe cherries are delivered the same day to the local washing station, pulped using a disc pulper, and then undergo a 36 to 48-hour fermentation process. Following fermentation, the parchment is soaked in clean water to enhance clarity and cup structure, then dried on raised beds for 6 to 7 days. Pulped cherries are repurposed into organic fertiliser, and wastewater is responsibly treated using lagoon systems, protecting nearby water sources.
Full traceability is maintained from cherry reception to storage.
