Colombia
Dark Chocolate
Honey
This coffee comes from a single producer: Ricardo Bustos from the Cauca region in Colombia. He is the owner of Finca El Cóndor – literally translated from Spanish, this means 'Farm of the Condor', a reference to the Andean bird that symbolizes strength and freedom. On his 'finca', Ricardo cultivates an Arabica Bourbon variety, known for its refined sweetness and elegant character. Cauca is a region heavily influenced by the FARC and home to many indigenous communities.
This coffee is washed-processed. This means that after harvesting, the coffee cherries are pulped, fermented, and the pectin layer is washed off with water before the beans dry. In the cup, you taste a soft and round character with notes of honey and dark chocolate. The result is a refined coffee with a mild sweetness and a comfortable, full finish.
